
Black Bean Sweet Potato Soup
🍲 Instructions
- Sauté aromatics: Heat olive oil in a large pot. Add onion and garlic, cook until softened.
- Add sweet potatoes and spices: Stir in diced sweet potatoes, cumin, paprika, salt, and pepper.
- Simmer: Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until sweet potatoes are tender.
- Add black beans: Stir in black beans and coconut milk (if using). Simmer for another 5 minutes.
- Blend (optional): For a creamier texture, blend part of the soup with an immersion blender.
- Serve: Ladle into bowls and top with your favorite garnishes.
