- Prep the cauliflower: Toss florets with soy sauce, ketchup, oil, salt, garlic powder, and black pepper. Coat with cornstarch until evenly covered.
- Bake: Spread on a parchment-lined sheet and bake at 400°F (200°C) for 24–28 minutes until golden and crisp.
- Make the sauce: Sauté garlic, ginger, and chilies in oil. Add onion and celery, cook until translucent. Stir in soy sauce, maple syrup, and peppers.
- Thicken: Add cornstarch slurry and simmer until glossy and thick.
- Combine: Toss baked cauliflower in the sauce until fully coated. Garnish and serve hot over rice or quinoa.
