🧂 Ingredients:
- 1¾ lbs sweet potatoes (peeled and boiled)
- 8 cups all-purpose flour
- â…” cup water
- 3 tbsp active dry yeast
- 3 tsp salt
🔥 Instructions:
- Boil & Mash: Cook sweet potatoes until soft, then mash and let cool.
- Activate Yeast: Mix yeast with warm water and let sit for 10 minutes.
- Make Dough: Combine flour, mashed sweet potato, yeast mixture, and salt. Knead until smooth and elastic.
- Ferment: Let dough rest in the fridge for up to 3 days (for deeper flavor).
- Shape: Divide into 8–10 balls, flatten to about 1 inch thick.
- Rest Again: Let rise for 30 minutes in a warm place.
- Cook: Heat a dry skillet over medium-high. Cook each flatbread, flipping regularly until a thin crust forms. Toast the sides by turning them upright briefly.
- Serve: Slice and slather with garlic butter and chopped parsley.

- ½ cup butter
- 2 cloves garlic, minced
- 1 tbsp chopped parsley
- Salt to taste
