Make the glaze In a saucepan, combine peaches, bourbon, maple syrup, mustard, vinegar, and thyme. Simmer over medium heat for 10–12 minutes until peaches break down and sauce thickens slightly. Season with salt and pepper.
Prep the salmon Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place salmon fillets skin-side down, drizzle with olive oil, and season with salt and pepper.
Roast & glaze Roast salmon for 15–20 minutes. About 5 minutes before it’s done, spoon glaze over fillets and return to oven to caramelize.
Serve Drizzle with remaining glaze and garnish with fresh herbs. Pair with roasted veggies or wild rice.
