Marinate the Pork
Combine all dry spices and rub them into the pork chunks.
Place pork in a zip-lock bag or bowl, refrigerate overnight.
Cook Low and Slow
Preheat oven to 250°F (120°C).
Place pork in a Dutch oven. Add wine, orange juice, vinegar, and bay leaf.
Cover and bake for 3½ hours, or until fork-tender.
Alternatively, cook in a slow cooker on low for 6–8 hours.
Shred and Finish
Remove pork, shred with forks. Skim fat from the juices and return pork to the pot to soak up flavor.
Assemble the Sandwich
Pile the pork onto toasted rolls. Add optional toppings like piri piri sauce or sautéed onions.
