Prep the Meat & Veggies Chop meat, liver, and fat into chunks. Mix with onion, celery, peppers, garlic, and seasonings. Refrigerate for at least 1 hour.

Cook the Mixture Place everything in a large pot, cover with water, and simmer until tender (90 minutes to 3 hours). Strain and reserve the cooking liquid.

Grind & Mix Grind the meat and veggies. Combine with rice, parsley, and green onions. Add up to 4 cups of reserved broth and mix thoroughly.

Form or Stuff

For sausage: Stuff into hog casings and poach in 165–170°F water for 10 minutes.

For boudin balls: Roll into balls, bread, and deep-fry until golden.
