
Cajun Smothered Pork Chops—

- Sear the chops Heat olive oil in a heavy cast iron Dutch oven. Season pork chops with Cajun seasoning and brown well on both sides. Remove and set aside.
- Sauté the veggies Add onion, bell peppers, and celery to the pot. Cook until soft and translucent, stirring often.
- Smother it Return pork chops to the pot. Add garlic, Worcestershire, and enough water to just cover the meat. Stir well. Add Kitchen Bouquet if desired for color.
- Simmer low and slow Cover the pot almost completely and simmer until the pork is fork-tender—about 1 hour.
- Finish with flavor Uncover, add mushrooms, green onions, and parsley. Simmer 5 more minutes. Taste and adjust seasoning.
- Serve Spoon over hot cooked rice and let the gravy do the talking.
