
Caldo Verde (Portuguese Green Soup)

- Sauté aromatics: Heat olive oil in a large pot. Add onion and garlic, cooking until soft and fragrant.
- Cook potatoes: Add sliced potatoes and broth. Simmer until potatoes are tender, about 20 minutes.
- Blend base: Use an immersion blender to puree the soup until smooth. (Or blend in batches.)
- Add sausage & greens: Stir in sausage and shredded greens. Simmer for 10–15 minutes until greens are tender.
- Season & serve: Adjust salt and pepper. Serve hot with crusty bread or broa (Portuguese cornbread).
🍽️ Tips & Variations:
- For a vegetarian version, skip the sausage and add smoked paprika or a splash of olive oil for depth.
- A drizzle of extra virgin olive oil on top adds richness.
