Cheesy Hamburger Casserole

Cheeseburger Casserole is a one pot, 30 minute recipe that’s outrageously good. Beefy, cheesy and saucy, it tastes like cheeseburgers in pasta form. It’s a homemade Hamburger Helper – a tastier and much healthier version of the popular boxed pasta!
This Cheesy Hamburger Casserole is just as easy to make as Hamburger Helper, and you can control the ingredients. Great weekday meal and the kids love it!
Oh boy I don’t even know where to begin with this cheeseburger casserole. Okay one word.. yummilious! yeah I know it’s not a real word but that’s the only word I can think of that can possibility explain how amazing this cheeseburger casserole is.

Alright, this Cheesy Ground Beef and Rice Casserole recipe is definitely not my norm, but it is who I am and it happens to be a recipe that I get a crazy amount of emails about. A long time ago (and seriously, check out the picture and you’ll laugh your heart out at how little I knew about food photography) I posted a recipe called Busy Day Casserole and it has been one of my top recipes for years now. It never disappears from the most viewed recipes.
My mother made this recipe when I was a little girl and it has always been a favorite of mine. It is my go to recipe when I can’t think of anything to make and it works great for a potluck party or a casual meal for company. I have tweaked it to make it my own but my tweaks have only enhanced it. All you need to accompany this delicious meal is a crisp green salad and a hot crunchy roll. I hope you enjoy this wonderful one-pot meal that is just down home good eats!

BAKED LEGS WITH CREAM OF MUSHROOM

Ingredients
  • 1/4 cup flour you can use gluten-free flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 lb chicken legs about 3-4 large chicken legs

  • 3 garlic cloves minced

Mexican Street Corn

Whenever we return to my husband’s hometown for one of the summer vacations – Flag Day, July 4th or Labour Day – there is always a small taco cart in the park with the rest of the food trucks.

This cart is always lined up in front and around the corner with people waiting to eat classic street tacos, burritos and toasted Mexican street corn (elotes) topped with sauce.

It is absolutely impossible to delicately eat this dirty corn on the cob, but you are usually not alone as half of the other people who gather for the event are also covered in it. Events in small towns, and the food they offer, mean that summer is really here!

When we are away from the bustling parties in his hometown, my husband and I can relive the fun by grilling corn on the grill and making our own version of Mexican street corn in just a few minutes. The charred kernels and hot sauce make this dish truly different from everyday corn on the cob.

If you can’t find traditional Mexican cream in your local grocery store, use regular sour cream. Cream is a little thinner than sour cream and contains salt, which makes it very divine. This is usually what we keep at home now!

And if you can’t find cotija, feel free to omit it or use grated parmesan cheese instead.

CROCK POT APPLE CINNAMON ROLL CASSEROLE

Crock Pot Cinnamon Roll Casserole with Apples is cut up cinnamon rolls and chopped apples that are coated in a sweet egg custard in a slow cooker.

HOW TO MAKE CROCK POT CINNAMON ROLLS:

Italian Crescent Casserole

I love it when I cook something and it is such a hit that I don’t have to worry about leftovers. It is sad though and a waste but leftovers tend to be forgotten about in our house and the dogs usually end up with a messy experiment or something tasty. They are dogs so they win either way. Well this recipe I made is very similar to the Pillsbury Italian Crescent Casserole Recipe but I changed the kind of sauce used but I am sure it is just as good either way.

I recently taught a cooking class for the youth in our church. I explained to them that if you can brown beef you can make so many meals. This one included.

Ingredients

  • 1 lb ground beef, cooked, drained

  • 1 cup Three Cheese Pasta Sauce (the original called for a different kind. I love this one more so I used it)

  • 1 can (8 oz) refrigerated crescent dinner rolls

  • 1½ cups shredded Italian cheese blend (6 oz)

  • ¼ teaspoon dried basil leaves
