Sauté aromatics: Heat oil in a pan, add curry leaves, green chillies, and onions. Cook until golden.
Add spices: Stir in ginger, garlic, turmeric, chilli powder, coriander powder, and garam masala.
Cook liver: Add liver pieces and sauté until fully cooked (about 10 minutes).
Finish: Sprinkle pepper powder, adjust salt, and cook for another minute.
Serve hot with steamed rice, rasam, or roti.
