  1. Make the chimichurri Combine parsley, oregano, garlic, red pepper flakes, vinegar, olive oil, lemon juice, salt, and pepper in a bowl. Mix well and let sit for 15–30 minutes to meld flavors.
  2. Season and cook the shrimp Toss shrimp with olive oil, paprika, salt, and pepper. Grill or sauté over medium-high heat for 2–3 minutes per side until pink and slightly charred.
  3. Combine and serve Toss hot shrimp with chimichurri sauce or serve with sauce spooned over the top. Garnish with extra herbs or lemon wedges.
