Creamy Butter Beans with Smoked Meat


Instructions:

  1. Soak the Beans (if using dried):

    • Rinse and soak butter beans overnight. Drain before using.

  2. Cook the Base:

    • In a large pot, heat olive oil or butter. Add chopped onion and garlic, sauté until translucent.

  3. Add Meat and Seasonings:

    • Add smoked meat, bay leaves, paprika, thyme, salt, and pepper. Stir for a couple of minutes to blend the flavors.

  4. Add Beans and Liquid:

    • Add the soaked butter beans and pour in enough water or broth to cover everything well. Bring to a boil.

  5. Simmer Slowly:

    • Lower the heat and let simmer gently for 1.5 to 2 hours (if using dried beans), or 30–40 minutes if using canned. Stir occasionally, and add more liquid if it gets too thick.

  6. Final Touch:

    • When the beans are tender and the sauce is creamy, adjust seasoning. For extra creaminess, mash a few beans in the pot or add a splash of cream.
