🍅 Creamy Tomato Bisque
Ingredients:
- 2 tbsp olive oil or butter
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 can (400g) crushed tomatoes or 4 fresh tomatoes, peeled and chopped
- 1 cup vegetable or chicken broth
- ½ cup heavy cream
- 1 tsp sugar (optional, to balance acidity)
- Salt and pepper to taste
- Fresh basil or thyme (optional)
Method:
- In a pot, heat olive oil and sauté onion until soft.
- Add garlic and cook for 1 minute.
- Stir in tomatoes and broth. Simmer for 15–20 minutes.
- Blend the soup until smooth (use a blender or immersion blender).
- Return to pot, stir in cream, and season with salt, pepper, and sugar.
- Simmer for 5 more minutes. Garnish with herbs if desired.
