🍅 Creamy Tomato Bisque

Ingredients:

  • 2 tbsp olive oil or butter
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 can (400g) crushed tomatoes or 4 fresh tomatoes, peeled and chopped
  • 1 cup vegetable or chicken broth
  • ½ cup heavy cream
  • 1 tsp sugar (optional, to balance acidity)
  • Salt and pepper to taste
  • Fresh basil or thyme (optional)

Method:

  1. In a pot, heat olive oil and sauté onion until soft.
  2. Add garlic and cook for 1 minute.
  3. Stir in tomatoes and broth. Simmer for 15–20 minutes.
  4. Blend the soup until smooth (use a blender or immersion blender).
  5. Return to pot, stir in cream, and season with salt, pepper, and sugar.
  6. Simmer for 5 more minutes. Garnish with herbs if desired.
