Crockpot Beef Chile Colorado,

🕰️ Instructions

  1. Make the chile sauce Soak dried chiles in hot water for 20 minutes until soft. Blend with garlic, cumin, oregano, salt, and soaking liquid until smooth. Strain if desired for a silky texture.
  2. Brown the beef Toss beef cubes with flour, salt, and pepper. Brown in a skillet with oil (optional but adds flavor).
  3. Slow cook Add beef to crockpot. Pour chile sauce and beef broth over it. Add bay leaf. Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is fork-tender.
  4. Finish and serve Remove bay leaf. Taste and adjust seasoning. Serve with warm tortillas, rice, or beans.

This dish is rich, earthy, and deeply satisfying. Want to add potatoes or make it spicier with chipotle? I’ve got plenty of variations to spice things up.
