  • 3–4 lb pork shoulder or pork butt, boneless or bone-in
  • 1 onion, sliced (for roasting bed)

🔪 Instructions

  1. Marinate the pork Combine all marinade ingredients. Place pork in a large zip-top bag or bowl and pour marinade over it. Refrigerate for at least 8 hours, preferably overnight.
  2. Prepare to roast Preheat oven to 325°F (165°C). Place sliced onions in a roasting pan. Remove pork from marinade and place on top of onions. Reserve marinade.
  3. Roast the pork Cover with foil and roast for 2.5–3 hours. Then uncover, baste with reserved marinade, and roast another 1–1.5 hours until deeply browned and fork-tender.
  4. Shred and serve Let rest for 15 minutes. Shred or slice the pork and drizzle with pan juices. Serve with rice, black beans, and fried plantains.
