
Cuban Mojo Pork Recipe
🐖 Pork
- 3–4 lb pork shoulder or pork butt, boneless or bone-in
- 1 onion, sliced (for roasting bed)
🔪 Instructions
- Marinate the pork Combine all marinade ingredients. Place pork in a large zip-top bag or bowl and pour marinade over it. Refrigerate for at least 8 hours, preferably overnight.
- Prepare to roast Preheat oven to 325°F (165°C). Place sliced onions in a roasting pan. Remove pork from marinade and place on top of onions. Reserve marinade.
- Roast the pork Cover with foil and roast for 2.5–3 hours. Then uncover, baste with reserved marinade, and roast another 1–1.5 hours until deeply browned and fork-tender.
- Shred and serve Let rest for 15 minutes. Shred or slice the pork and drizzle with pan juices. Serve with rice, black beans, and fried plantains.
