
Cuban-style Lechón Asado (Roast Pork)
🍽️ Method
1. Prepare the Mojo Marinade
In a bowl, mix sour orange juice, garlic, cumin, oregano, salt, pepper, and olive oil.
2. Marinate the Pork
- Score the pork skin with a knife.
- Rub the marinade all over the pork, making sure it gets into the cuts.
- Cover and refrigerate for at least 8 hours (overnight is best).
3. Roast the Pork
- Preheat oven to 160°C (325°F).
- Place pork in a roasting pan, cover with foil.
- Roast for 3–4 hours, basting occasionally with juices.
- Remove foil for the last 30 minutes to crisp the skin.
4. Serve
- Let the pork rest for 15 minutes.
- Slice and serve with rice, black beans, and fried plantains.
- Garnish with sliced onions if desired.
