Cuban-style Lechón Asado (Roast Pork)

🍽️ Method

1. Prepare the Mojo Marinade

In a bowl, mix sour orange juice, garlic, cumin, oregano, salt, pepper, and olive oil.

2. Marinate the Pork

  • Score the pork skin with a knife.
  • Rub the marinade all over the pork, making sure it gets into the cuts.
  • Cover and refrigerate for at least 8 hours (overnight is best).

3. Roast the Pork

  • Preheat oven to 160°C (325°F).
  • Place pork in a roasting pan, cover with foil.
  • Roast for 3–4 hours, basting occasionally with juices.
  • Remove foil for the last 30 minutes to crisp the skin.

4. Serve

  • Let the pork rest for 15 minutes.
  • Slice and serve with rice, black beans, and fried plantains.
  • Garnish with sliced onions if desired.
