Cuban-Style Red Beans

Prepare the beans Drain soaked beans. In a large pot, add beans, ham hock or chorizo, bay leaf, and water or broth. Bring to a boil, then reduce heat and simmer for 45 minutes.

Make the sofrito In a skillet, heat olive oil. Sauté onion, bell pepper, and garlic until soft. Stir in tomato paste, cumin, oregano, and paprika. Cook for 2–3 minutes.

Combine and simmer Add sofrito to the beans along with diced potatoes and sweet potatoes. Simmer for another 30–45 minutes until beans and vegetables are tender.

Finish and serve Season with salt, pepper, and a splash of vinegar if desired. Serve warm over white rice or with Cuban bread.
