- Sauté the base: In a wide pan, heat olive oil over medium heat. Add onions and cook until soft and golden.
- Add meats: Stir in chouriço and presunto. Fry for 4–5 minutes to release flavor.
- Spice it up: Add garlic, chilies, bay leaves, paprika, and cumin. Stir for 2 minutes.
- Tomato time: Mix in tomato paste or white wine, then add chopped tomatoes. Cover and cook until softened.
- Add peas: Stir in peas and pour in stock. Season with salt and pepper. Simmer for 5 minutes.
- Poach the eggs: Make small wells in the stew and crack in the eggs. Cover and cook until eggs are just set.
- Garnish & serve: Sprinkle with fresh herbs and serve with crusty bread or rice.
