
Festive Crab Brûlée 🦀🔥
👨🍳 Instructions
- Preheat Oven Set oven to 325°F (163°C). Prepare a water bath by placing ramekins in a roasting tray and filling halfway with warm water.
- Make the Custard Whisk egg yolks and cream until smooth. Stir in garlic, ginger, Parmesan, salt, and pepper. For extra silkiness, strain the mixture through a fine sieve.
- Assemble the Brûlée Spoon crab meat into ramekins (fill halfway). Pour custard mixture over the crab, nearly to the top.
- Bake Place tray in oven and bake for 30–35 minutes until custard is just set. Remove and cool slightly.
- Caramelize the Top Sprinkle a thin layer of sugar over each ramekin. Use a kitchen torch to caramelize until golden and crisp.
- Serve Warm or Chilled Garnish with microgreens or chives if desired. Serve as a starter or elegant canapé.
