  1. Preheat Oven Set oven to 325°F (163°C). Prepare a water bath by placing ramekins in a roasting tray and filling halfway with warm water.
  2. Make the Custard Whisk egg yolks and cream until smooth. Stir in garlic, ginger, Parmesan, salt, and pepper. For extra silkiness, strain the mixture through a fine sieve.
  3. Assemble the Brûlée Spoon crab meat into ramekins (fill halfway). Pour custard mixture over the crab, nearly to the top.
  4. Bake Place tray in oven and bake for 30–35 minutes until custard is just set. Remove and cool slightly.
  5. Caramelize the Top Sprinkle a thin layer of sugar over each ramekin. Use a kitchen torch to caramelize until golden and crisp.
  6. Serve Warm or Chilled Garnish with microgreens or chives if desired. Serve as a starter or elegant canapé.
