Feta Egg Bake

Preheat oven to 375°F (190°C). Grease an 8×8 baking dish with olive oil.

Sauté veggies: In a skillet, heat olive oil and sauté onion and spinach until wilted (about 5 minutes).

Layer the dish: Spread sautéed veggies and tomatoes evenly in the baking dish. Sprinkle feta over the top.

Mix eggs: In a bowl, whisk eggs with oregano, salt, and pepper. Pour over the veggie-feta mixture.

Bake for 30–35 minutes until eggs are set and golden on top.

Cool & serve: Let cool slightly, garnish with herbs, and slice into squares.
