  1. Mix the Batter In a medium bowl, combine cornmeal, flour, salt, water, milk, bacon drippings, and egg. Stir until you get a thick batter that can be dropped by spoon.
  2. Heat the Skillet Warm a cast-iron skillet over medium heat. Add oil and let it get hot but not smoking.
  3. Fry the Fritters Drop spoonfuls of batter into the skillet. Cook until edges bubble and the center sets. Flip and cook the other side until golden brown.
  4. Drain & Serve Transfer to a paper towel-lined plate to drain excess oil. Serve warm with honey or butter if desired.
