- Mix the Batter In a medium bowl, combine cornmeal, flour, salt, water, milk, bacon drippings, and egg. Stir until you get a thick batter that can be dropped by spoon.
- Heat the Skillet Warm a cast-iron skillet over medium heat. Add oil and let it get hot but not smoking.
- Fry the Fritters Drop spoonfuls of batter into the skillet. Cook until edges bubble and the center sets. Flip and cook the other side until golden brown.
- Drain & Serve Transfer to a paper towel-lined plate to drain excess oil. Serve warm with honey or butter if desired.
