Slice the Tomatoes Cut the green tomatoes into ¼-inch thick slices. Sprinkle with salt and let them sit for 10–15 minutes to draw out moisture.
Prepare the Breading Stations
In one bowl: mix flour with salt, pepper, and optional spices.
In another: beat eggs with buttermilk.
In a third: pour the cornmeal.
Dredge the Tomato Slices Dip each slice first in the flour, then the egg mixture, and finally coat with cornmeal.
Fry Until Golden Heat oil in a skillet over medium-high heat. Fry the slices for 2–3 minutes per side until golden brown and crispy.
Drain and Serve Place on paper towels to drain excess oil. Serve hot with dipping sauce like remoulade, ranch, or spicy mayo.
