- Make the Meat Sauce Sauté onions in olive oil, add garlic, tomato paste, and ground beef. Brown the meat, then add wine, tomatoes, sugar, bay leaf, cinnamon, and clove. Simmer for 30 minutes. Remove spices before layering.
- Cook the Pasta Boil pasta 2–3 minutes less than package instructions. Drain and mix with egg whites and feta.
- Prepare the Béchamel Melt butter, whisk in flour to form a paste. Gradually add warm milk, whisking constantly. Once thickened, remove from heat and stir in egg yolks, cheese, nutmeg, salt, and pepper.
- Assemble In a buttered baking dish (25×35 cm), layer pasta, meat sauce, and béchamel. Smooth the top and sprinkle with extra cheese.
- Bake Bake at 180°C (350°F) for 40 minutes until golden. Let cool slightly before serving.
