Greek Slow Roasted Lamb with Lemon Potatoes

  1. Prep the lamb
    • Make small incisions in the lamb and insert garlic slices.
    • Rub with olive oil, lemon juice, oregano, paprika, salt, and pepper.
    • Place in a large roasting pan with onion slices underneath.
  2. Add liquids and herbs
    • Pour wine and stock around the lamb.
    • Scatter rosemary and thyme sprigs.
  3. Roast low and slow
    • Cover tightly with foil and roast at 160°C (320°F) for 3½ to 4 hours.
    • Uncover for the last 30 minutes to brown the top.
  4. Prepare the potatoes
    • Toss potatoes with lemon juice, olive oil, oregano, salt, and pepper.
    • Add to the pan around the lamb for the last 1½ hours of roasting.
  5. Serve
    • Let lamb rest for 15 minutes before slicing.
    • Serve with the lemony potatoes and pan juices.
