
Greek Slow Roasted Lamb with Lemon Potatoes
🔥 Instructions
- Prep the lamb
- Make small incisions in the lamb and insert garlic slices.
- Rub with olive oil, lemon juice, oregano, paprika, salt, and pepper.
- Place in a large roasting pan with onion slices underneath.
- Add liquids and herbs
- Pour wine and stock around the lamb.
- Scatter rosemary and thyme sprigs.
- Roast low and slow
- Cover tightly with foil and roast at 160°C (320°F) for 3½ to 4 hours.
- Uncover for the last 30 minutes to brown the top.
- Prepare the potatoes
- Toss potatoes with lemon juice, olive oil, oregano, salt, and pepper.
- Add to the pan around the lamb for the last 1½ hours of roasting.
- Serve
- Let lamb rest for 15 minutes before slicing.
- Serve with the lemony potatoes and pan juices.
