Prep the Potatoes Scrub and dry the potatoes. Toss with olive oil, salt, and pepper. Roast at 400Β°F (200Β°C) for 20β25 minutes until golden and tender.
Prep the Octopus Pat dry and brush with olive oil. Season lightly with salt and pepper.
Grill the Octopus Heat grill to high (475β500Β°F). Grill octopus 3β4 minutes per side until lightly charred and crisp at the edges.
Assemble the Dish Slice octopus into 1-inch pieces. Arrange over roasted potatoes. Drizzle with lemon vinaigrette and garnish with parsley or greens.
