👨🍳 Instructions
- Preheat oven to 400°F (200°C).
- Season the lamb generously with salt and pepper.
- Sear the lamb in a hot skillet with 4 tbsp olive oil and garlic until browned on all sides (about 3–4 minutes).
- Make the herb crust: In a food processor, blend garlic, breadcrumbs, parsley, rosemary, Parmesan, and 1 tbsp olive oil until combined.
- Brush lamb with Dijon mustard, then coat with the herb mixture, pressing gently to adhere.
- Roast for 20–25 minutes until internal temp reaches 130°F for medium-rare.
- Rest for 10 minutes before slicing into chops.
