- Sauté the aromatics: In a large skillet or Dutch oven, heat olive oil. Add onion, bell pepper, and garlic. Cook until softened and fragrant.
- Add potatoes: Stir in potatoes and cook for 5–7 minutes, letting them brown slightly.
- Add tomatoes and seasoning: Mix in crushed tomatoes, tomato paste, oregano, basil, salt, pepper, and water. Bring to a simmer.
- Add green beans: Stir in green beans, cover, and simmer on low for 30–40 minutes until potatoes are tender and beans are soft.
- Finish and serve: Adjust seasoning. Serve warm with crusty bread or as a side to grilled meats or polenta.
