- Marinate the jackfruit In a bowl, mix jackfruit with tomato paste, balsamic vinegar, Worcestershire, soy sauce, and mustard. Cover and marinate for at least 1 hour (overnight for deeper flavor).
- Sear the veggies Preheat oven to 400°F (200°C). In a large skillet, heat olive oil. Brown onions and carrots, then set aside.
- Build the base Lower heat, sauté garlic until fragrant. Add marinated jackfruit and cook 2–3 minutes. Pour in red wine and simmer until reduced by half.
- Combine and braise Add broth, potatoes, cornstarch slurry, and salt. Top with thyme and rosemary. Cover and bake for 40 minutes until potatoes are tender and gravy thickens.
- Serve Remove herbs, adjust seasoning, and serve hot with crusty bread or mashed potatoes.
