- Marinate the chops: In a bowl, mix olive oil, garlic, rosemary, thyme, oregano, salt, pepper, and lemon juice. Rub this mixture all over the lamb chops. Let them marinate for at least 30 minutes (or up to 4 hours in the fridge).
- Preheat your oven to 400°F (200°C).
- Sear the chops: Heat a cast iron or oven-safe skillet over medium-high heat. Sear the lamb chops for 2–3 minutes on each side until browned.
- Bake: Transfer the skillet to the oven and bake for 8–10 minutes, depending on your preferred doneness. For medium-rare, aim for an internal temperature of 140°F (60°C).
- Rest and serve: Remove from the oven and let the chops rest for 5 minutes before serving. This helps retain their juices.
