👨‍🍳 Instructions

  1. Marinate the lamb
    • In a bowl, mix lamb with garlic, mustard, lemon juice, olive oil, wine, oregano, salt, and pepper.
    • Add onions and peppers. Mix well and marinate for at least 2 hours (overnight is best).
  2. Prepare the parchment pouch
    • Lay 4 long sheets of parchment paper in a star shape.
    • Place potatoes in the center, season with salt and oregano.
    • Pour marinade over potatoes, then layer lamb and vegetables on top.
    • Add tomato slices and cheese cubes.
  3. Wrap and roast
    • Gather parchment edges and tie tightly with string to form a sealed pouch.
    • Place in a roasting tin and bake at 180°C (350°F) for 1 hour 45 minutes.
    • Unwrap, baste with juices, and roast uncovered at 220°C (425°F) for 20 minutes until browned.
  4. Serve
    • Let lamb rest briefly. Serve with the roasted potatoes and juices.
