
Kleftiko – Greek Lamb Cooked in Parchment
👨🍳 Instructions
- Marinate the lamb
- In a bowl, mix lamb with garlic, mustard, lemon juice, olive oil, wine, oregano, salt, and pepper.
- Add onions and peppers. Mix well and marinate for at least 2 hours (overnight is best).
- Prepare the parchment pouch
- Lay 4 long sheets of parchment paper in a star shape.
- Place potatoes in the center, season with salt and oregano.
- Pour marinade over potatoes, then layer lamb and vegetables on top.
- Add tomato slices and cheese cubes.
- Wrap and roast
- Gather parchment edges and tie tightly with string to form a sealed pouch.
- Place in a roasting tin and bake at 180°C (350°F) for 1 hour 45 minutes.
- Unwrap, baste with juices, and roast uncovered at 220°C (425°F) for 20 minutes until browned.
- Serve
- Let lamb rest briefly. Serve with the roasted potatoes and juices.
