  1. Prep the cod Pat cod fillets dry with paper towels. Season both sides with salt, pepper, and optional paprika or onion powder.
  2. Sear the fish Heat olive oil in a large skillet over medium-high heat. Add cod fillets and cook for 3–4 minutes per side until golden and flaky. Remove and set aside.
  3. Make the sauce In the same pan, melt butter. Add garlic and sauté for 30 seconds until fragrant. Stir in lemon juice and zest. Simmer briefly.
