🧂 Ingredients (Serves 2)

  • 2 lobster tails (or 1 whole lobster, cooked and halved)
  • 2 tbsp butter
  • 2 shallots, finely chopped
  • ½ cup mushrooms, sliced
  • ¼ cup dry white wine or sweet sherry
  • 2 tbsp flour
  • ¾ cup fish stock or milk
  • ¼ cup heavy cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 1 tbsp fresh tarragon or parsley
  • 2 tbsp grated Parmesan or Gruyère cheese
  • Olive oil (for roasting lobster tails)
