- ½ cup mushrooms, sliced
- ¼ cup dry white wine or sweet sherry
- 2 tbsp flour
- ¾ cup fish stock or milk
- ¼ cup heavy cream
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- 1 tbsp fresh tarragon or parsley
- 2 tbsp grated Parmesan or Gruyère cheese
- Olive oil (for roasting lobster tails)
