  1. Cook the Lobster Preheat oven to 400°F (200°C). Cut lobster tails lengthwise to expose the meat. Drizzle with olive oil and roast for 15–20 minutes until cooked through. Let cool, then remove meat and chop into bite-sized pieces. Save the shells for presentation.
  2. Make the Sauce In a pan, melt butter and sauté shallots until translucent. Add mushrooms and cook until soft. Pour in wine and reduce by half.
  3. Thicken the Sauce In the same pan, add flour and stir to form a paste. Slowly whisk in fish stock and cream. Simmer until thickened. Stir in mustard, herbs, salt, and pepper.
  4. Combine and Fill Add chopped lobster meat to the sauce. Spoon mixture back into the lobster shells. Top with cheese.
  5. Broil and Serve Broil for 3–5 minutes until cheese is golden and bubbling. Garnish with herbs and serve with a crisp salad or roasted vegetables.
