- Prep the Eggs

- Mix the Batter
- In a large bowl, combine corn, flour, Cajun seasoning, salt, and beaten yolks.
- Gently fold in whipped egg whites until just combined.
- Fry the Fritters
- Heat oil in a skillet over medium heat.
- Drop large spoonfuls of batter into the pan.
- Fry until golden brown on both sides (about 2โ3 minutes per side).
- Drain on paper towels.
