Prepare the Filling:
In a pan, melt butter and sauté onion and garlic until soft.
Add ground meat and cook until browned.
Stir in spices, herbs, salt, and pepper. Let cool slightly.
Make the Dough:
Use shortcrust pastry or make a hot water crust (flour, lard, hot water).
Roll out dough and cut into circles for base and lids.
Assemble the Pies:
Place a spoonful of filling in the center of each base.
Cover with a lid, seal edges, and poke a small hole in the top for steam.
Brush with beaten egg for a golden finish.
Bake:
Preheat oven to 180°C (350°F).
Bake pies for 30–40 minutes until golden brown.
Serve:
Enjoy warm with ale, pickles, or a side of root vegetables.
