Sear the cod: Season fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear cod for 2–3 minutes per side until lightly golden. Remove and set aside.
Make the sauce: In the same pan, sauté garlic until fragrant. Add cherry tomatoes and cook until softened. Stir in crushed tomatoes, lemon juice, and basil. Simmer for 5–7 minutes.
Finish the dish: Return cod to the pan, spoon sauce over the fillets, and simmer gently for 5 more minutes until fish flakes easily.
Serve: Garnish with extra basil and serve with couscous, rice, or crusty bread.
