Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prep the fish: Pat fillets dry for crispy skin. Place skin-side down on the sheet.
Season: Drizzle with olive oil, sprinkle salt and pepper, and press garlic onto the fillets.
Top with lemon and herbs: Layer lemon slices and sprigs of rosemary, thyme, and oregano.
Add wine: Pour around the fillets to keep them moist and infuse flavor.
Bake: Roast for 25 minutes or until the fish flakes easily with a fork.
Rest and serve: Let sit for 2 minutes before plating to allow flavors to meld.
