
Moroccan Meatballs (Meatball Tagine)

- Make the meatballs: Mix all meatball ingredients in a bowl. Knead well and shape into small balls (cherry-sized).
- Prepare the sauce: In a tagine or deep skillet, heat olive oil. Sauté onion and green pepper until soft. Add garlic and cook until fragrant.
- Add tomatoes: Stir in chopped tomatoes and spices. Simmer covered for 15–30 minutes until a thick sauce forms.
- Add meatballs: Place them gently into the sauce. Cover and simmer for 10–15 minutes until cooked through.
- Optional eggs: Crack eggs over the meatballs, cover, and cook until whites are set and yolks are slightly runny.
- Serve: Garnish with fresh herbs. Serve hot with Moroccan bread or couscous.
