👨‍🍳 Preparation Method

  1. Prepare the Cod Soak the salted cod in water for 24–48 hours, changing the water several times. Boil briefly, then flake into small pieces.
  2. Fry the Potatoes Fry the matchstick potatoes until golden and crispy. Drain on paper towels.
  3. Sauté the Onion & Garlic In a large pan, heat olive oil and sauté onion until soft. Add garlic and cook briefly.
  4. Add Cod & Potatoes Stir in the flaked cod and fried potatoes. Mix gently.
  5. Add Eggs Beat the eggs and pour over the mixture. Stir gently until eggs are just set — creamy, not dry.
  6. Finish & Serve Season with salt and pepper. Garnish with parsley and black olives. Serve hot!
