🍳 Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sauté veggies: In an oven-safe skillet, heat olive oil. Add peppers and onions with a pinch of salt. Cook until soft (6–8 mins).
  3. Add aromatics: Stir in garlic, red pepper flakes, chili powder, paprika, and jalapeños. Cook until fragrant.
  4. Build the sauce: Add both types of tomatoes and crush the whole ones by hand. Stir in herb stems and simmer for 20–30 mins until thick.
  5. Create nests: Make 6 indentations in the sauce. Add 2 tbsp ricotta into each, then crack an egg on top.
  6. Top and bake: Sprinkle cheddar and Parmesan over everything. Bake for 15–20 mins until eggs are set and cheese is bubbly.
  7. Serve: Garnish with fresh herbs and serve straight from the pan with toast and sides.
