
Portuguese Caldo Verde
🔥 Instructions:
- Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until soft and fragrant.
- Simmer potatoes: Add sliced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 20 minutes).
- Blend base: Use an immersion blender to puree the soup until smooth. (Or transfer to a blender in batches.)
- Add sausage & greens: Return soup to pot. Add sausage slices and shredded greens. Simmer for 10–15 minutes until greens are tender and sausage is heated through.
- Season & serve: Taste and adjust salt and pepper. Serve hot with crusty bread or broa (Portuguese cornbread).
🍽️ Tips:
- For a vegetarian version, skip the sausage and add smoked paprika for depth.
- Traditional Caldo Verde uses Galician cabbage, but kale or collards work beautifully.
- A drizzle of olive oil on top before serving adds richnes
