  1. Preheat the oven to 340°F (170°C). Grease and flour a tube pan or use parchment paper in a round cake pan.
  2. Beat the eggs and sugar: In a large bowl, use an electric mixer to beat the eggs, egg yolks, vanilla, and sugar for 2–3 minutes until the mixture is pale and doubled in volume.
  3. Add dry ingredients: Gradually mix in the sifted flour, baking powder, and salt. Do this gently to maintain the airiness of the batter.
  4. Bake: Pour the batter into the prepared pan and bake for 25–35 minutes. The top should be golden and slightly crackly. A toothpick inserted should come out clean.
  5. Cool and serve: Let the cake cool in the pan for 10 minutes, then invert onto a plate. Dust with powdered sugar if desired, or serve plain for a rustic touch.
