🧁 Method
- Preheat the oven to 340°F (170°C). Grease and flour a tube pan or use parchment paper in a round cake pan.
- Beat the eggs and sugar: In a large bowl, use an electric mixer to beat the eggs, egg yolks, vanilla, and sugar for 2–3 minutes until the mixture is pale and doubled in volume.
- Add dry ingredients: Gradually mix in the sifted flour, baking powder, and salt. Do this gently to maintain the airiness of the batter.
- Bake: Pour the batter into the prepared pan and bake for 25–35 minutes. The top should be golden and slightly crackly. A toothpick inserted should come out clean.
- Cool and serve: Let the cake cool in the pan for 10 minutes, then invert onto a plate. Dust with powdered sugar if desired, or serve plain for a rustic touch.
