
Portuguese Fava Bean, Chouriço and Egg Stew
👨🍳 Method :
- Sauté the base: In a large pot, heat olive oil and sauté onion, garlic, and bay leaf until soft.
- Add chouriço: Stir in the sliced chouriço and cook for a few minutes to release its smoky flavor.
- Build the stew: Add tomato paste, paprika, and fava beans. Stir well and cover with water or broth. Simmer for 30–40 minutes until beans are tender.
- Poach the eggs: Crack the eggs directly into the stew. Cover and cook gently until the eggs are set (about 5–7 minutes).
- Serve: Spoon into bowls and garnish with parsley. Serve with crusty bread to soak up the delicious sauce.
