
Portuguese Recipe Gizzards

- Sauté the base: In a large pot, heat olive oil and sauté the onion until golden. Add garlic and bay leaf, stir gently.
- Build the sauce: Add tomato pulp and cook for 2–3 minutes. Stir in the gizzards and let them brown slightly.
- Deglaze & simmer: Pour in the water, wine, and beer. Add paprika, chili, salt, and pepper. Bring to a boil.
- Slow cook: Reduce heat and simmer for 40–60 minutes until the gizzards are tender and the sauce thickens. Add water if needed during cooking.
- Finish & serve: Sprinkle with chopped parsley. Serve hot with bread or rice.
