
Portuguese round potatoes BBQ chicken style
🔥 Method
- Make the marinade: Blend garlic, shallot, bell pepper, chili, herbs, lemon zest and juice, vinegar, olive oil, and salt until smooth.
- Prep the chicken: Slash the thick parts of the chicken to help absorb flavor. Rub half the marinade into the chicken and let it marinate for at least 30 minutes.
- Grill the chicken: Heat your BBQ to medium-high. Place chicken skin-side down and cook until browned. Flip and continue cooking, basting with extra marinade. Cover and cook for 30–45 minutes until fully cooked.
- Grill the potatoes and lemons: Toss par-boiled potatoes and lemon halves in olive oil and grill until crispy and charred.
- Serve: Arrange the grilled chicken with crispy potatoes and charred lemons. Drizzle with remaining marinade and sprinkle with fresh herbs.
