Pot Roast
- Prep the meat: Generously season the chuck roast with salt and pepper.
- Sear: Heat oil in a Dutch oven over medium-high. Brown onions, then carrots and garlic. Set aside.
- Sear the roast: Brown the meat on all sides. Remove and set aside.
- Deglaze: Pour wine or broth into the pot, scraping up browned bits. Stir in tomato paste and Worcestershire sauce.
- Combine: Return roast to pot. Add stock, vegetables, and tied herbs.
- Cook: Cover and roast in a 275°F (135°C) oven for 3–4 hours until tender.
Mashed Potatoes
- Boil: Cover potatoes with water, bring to a boil, and simmer until tender (about 30 minutes).
- Mash: Drain and mash with butter and evaporated milk. Season with salt.
