Step 01
Heat oven to 425°F. Prepare muffin pan with liners.
Step 02
Mix dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg.
Step 03
In another bowl, mash bananas. Add melted butter, brown sugar, egg, vanilla, milk. Mix well.
Step 04
Pour dry into wet ingredients. Mix until combined.
Step 05
Add nuts or chocolate if using.
Step 06
Fill muffin cups to top.
Step 07
Bake 5 minutes at 425°F.
Step 08
Lower to 350°F, bake 16-18 minutes more.
Step 09
Cool 5 minutes in pan, then move to rack.
