Roast Pork with Apricot Glaze

Preheat oven to 425°F (220°C).

Make the glaze: In a small saucepan, melt apricot preserves over medium-low heat for about 10 minutes. Keep warm.

Season the pork: Mix salt, oregano, garlic powder, and pepper. Rub evenly over the pork loin.

Roast: Place pork on a rack in a shallow roasting pan coated with cooking spray. Roast for 30 minutes.

Glaze and finish: Brush ¼ cup of the melted preserves over the pork. Roast for another 10 minutes. Repeat with remaining glaze and roast for an additional 10 minutes, or until internal temperature reaches 155°F (68°C).

Rest and serve: Let the pork rest for 10 minutes before slicing. Serve with pan juices or extra glaze
