Roasted Chicken Drumsticks with Potatoes

Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Drumsticks:
Pat the chicken drumsticks dry with paper towels to help them crisp up.
Drizzle the chicken with 1 tablespoon of olive oil, then sprinkle with garlic powder, paprika, thyme, rosemary, salt, and pepper. Toss to coat the drumsticks evenly.
Prepare the Potatoes:
Cut the potatoes into wedges and place them on the same baking sheet.
Drizzle the remaining olive oil over the potatoes and season with salt, pepper, and a little extra rosemary (optional). Toss to coat the wedges evenly.
Roast:
Arrange the chicken drumsticks on the baking sheet, leaving space for the potatoes.
Roast in the preheated oven for 40–45 minutes, flipping the chicken halfway through and stirring the potatoes occasionally, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden.
Finish & Serve:
Once the chicken is cooked and golden, remove from the oven.
Garnish with fresh parsley and a few lemon slices for added brightness.
Tips & Variations:
Add some carrots or bell peppers to the sheet pan for extra veggies.
For extra flavor, marinate the chicken in the seasoning mixture for 30 minutes before roasting.
You can use sweet potatoes instead of regular potatoes for a different twist
