- Prep the shrimp Rinse thoroughly and pat dry. Toss with salt, pepper, and garlic powder. Coat evenly in cornstarch.
- Fry until crispy Heat oil in a deep pan over medium heat. Fry shrimp in batches for 2–3 minutes per side until golden. Drain on paper towels or a rack.
- Sauté aromatics In a clean pan, heat 1½ tbsp oil. Add jalapeños and green onions. Cook for 1–2 minutes.
- Finish the dish Add fried shrimp to the pan. Sprinkle with remaining salt and pepper. Toss to coat and serve immediately.
